Then Iain Burnett of The Highland Chocolatier based in Perthshire, shares his passion for the ingredients, flavours and textures required by a Master Chocolatier, and for the making of the award-winning Velvet Truffles.  He shares insights into the enormous impact that processing from cocoa to chocolate can have on what we experience as chocolate in our lives.
